Just sharing one of our favorite recipes this week....here it is-
Ground Turkey Casserole-
Navy Bean -cooked or canned, drained 1/2 cup
Milk 1 cup
Turmeric 1 tsp.
Coriander 1 tsp
Salt 1 tsp
Vegetable broth 1 cup
Olive oil cooking spray
Ground Turkey 1 lb 5 oz
Sweet onion 1 cup
Baby carrots thin sliced 1 1/2 cup
Asparagus cut into 1 inch pieces 1 1/2 cup
Green cabbage grated 2 cups
Almonds sliced 1/2 cup
Low fat aged white Cheddar shredded 1 1/2 cup
Instructions-
Preheat oven to 350. Add the Navy beans, half the milk, turmeric, coriander and salt to a blender and puree until smooth.
Set aside and stir in the rest of the milk and the vegetable broth. Saute the turkey until lightly browned, then transfer to a large casserole dish. Add remaining ingredients to the casserole dish, including the pureed bean mixture, and cover. Stir well to incorporate and bake for 25- 30 minutes.
Serves 3 large or 6 small.
